For example, not all tomato plants will produce ripe fruit in 60 days. I’ll give you some examples of varieties that will produce quickly, along with how to start them in the garden. Let’s begin. If you choose wisely, some of them will be ready in a month! I’ve included some tables below to compare these vegetables. More details follow after the tables. They go great in stir-fries, soups, or as a snack. You can grow some shorter carrot varieties in only 50 days. As long as you sift the soil and give them enough spacing, these carrots should grow straight and true in no time: Adelaide – this F1 hybrid carrot variety from Johnny’s Selected Seeds has the usual orange color. However, they mature in 50 days at less than 4 inches (10 centimeters) long. Cucumbers Cucumbers are great for salads, or for turning into pickles. Some cucumbers will grow in only 7 weeks. They don’t like cold weather, so keep them warm and these varieties will reward you with a harvest in no time: Citadel – this F1 hybrid cucumber variety from Johnny’s Selected Seeds has the usual green color. They mature in only 52 days, meaning the 4.5 inch long fruits will be ready for harvest in 7.5 weeks. Green Beans Green beans produce lots of pods if you keep picking them. They also do well in the summer heat, so plant lots of them and cut up the pods to blanch and freeze if you have extra! Some green bean varieties produce pods in just 7 to 8 weeks. Here are some fast-maturing green bean varieties to try: Amethyst – the name doesn’t lie: these green beans grow purple! The pods are 5 inches long and mature in 56 days, leaving you with beautiful purple pods in only 8 weeks. Green Onions (or Scallions) You might not be able to grow the fully-sized onions that resemble globes in less than 60 days. You can grow some types of green onions or scallions in only 50 to 60 days. However, you can grow green onions (or scallions) pretty fast: Deep Purple – true to its name, these bunching onions have small purple bulbs at the bottom. They mature in 60 days flat, just barely qualifying for our list. You can find Deep Purple Onions at Johnny’s Selected Seeds.Guardsman – these bunching onions from Johnny’s Selected seeds mature in short order: it only takes 50 days to harvest the thin white bulbs. The Guardsman Onion is the recommendation from Johnny’s Selected Seeds for planting over winter in the cold northern regions. Kohlrabi Kohlrabi is an interesting vegetable for sure. I have put them in soups and also eaten them cubed and boiled. You can get kohlrabi in only 37 to 48 days. Some varieties are purple! The following kohlrabi varieties will produce for you in no time: Azur Star – if you can’t tell, I like purple vegetables. If you feel the same way, Azur Star won’t let you down. The purple 2 to 3 inch bulbs will mature in only 48 days, giving you a nice harvest in just under 7 weeks. Some varieties have edible pods, which can be used in stir-fries or for snacking. Some pea plants only take 58 days to produce pods. Others are better for shelling and putting in soup. Either way, these varieties will give you a harvest before you can blink: Oregon Giant – these peas were born and bred at Oregon State University. The 4.5 inch long pods mature in just 60 days, so they just barely slide their way into our list. Radish Radishes grow fast, and besides, you should have an underground companion for your carrots and kohlrabi. Some radishes will produce in only 3 weeks - that's fast! These radish varieties will be ready to harvest before you know it: French Breakfast – these radishes grow so fast, you won’t believe it. The roots are reddish with white at the bottom, and they are ready for harvest in 21 days, meaning you can pick them after only 3 weeks of growing. Spinach Most people will include lettuce over spinach in their vegetable lists. I’m not like most people. I like the deeper green of spinach, and I prefer it in salads. It is also great when sautéed in olive oil with chopped onions, garlic, and a little salt. Spinach is great for salads, and some varieties produce deep green leaves in 26 days. If you want a fast harvest, the following spinach varieties won’t let you down: Emperor – this hybrid spinach variety can be planted in spring or fall, making it a versatile choice. Many tomato varieties take quite some time to mature, but not these beauties: Sun Gold – these cherry tomatoes are sweet and have the color of a tangerine. They are indeterminate, meaning they continue to produce until frost. Maturing in only 57 days, these tomatoes won’t disappoint.
